GREEN ASPARAGUS: these have a stronger and more grassy flavour due to the chlorophyll.
WHITE ASPARAGUS: these are definitely more delicate and ‘meaty’, as they grow underground.
PURPLE AND PINK ASPARAGUS: these have a more bitter and fruity flavour.
How to choose them: fresh, only available in late spring or early summer. With a fairly thick stem, firm, straight and flexible spears and tightly-closed buds.
